A few weeks ago, my mom brought over a Chia Pod {The Chia Co} while she was watching Ethan. She fed him a bit and he went crazy! He loved it! I looked over the ingredient deck and was pleasantly surprised. The ingredient list was short, simple, and intelligible. And the best part was the absence of sugar. The Chia Pod would make a great addition to my arsenal of snacks or fill out meals for Ethan, not mention for myself.
A quick search let me know that the Chia Pods are available at local Whole Foods and Walmart, but if I wanted to make this chia pudding a staple at out house, we couldn't possible afford upwards of $3 per pudding, no matter how cute the packaging was. I have made chocolate chia pudding before so I thought I might as well try my hand at some different flavors. I started with the vanilla bean, as I had all the ingredients on hand. In this example I used black chia seeds, but in the future I will probably want to use white to be a bit more aesthetically pleasing.
Although I do plan on making my own chia pudding for Ethan, I am pleased to know that, in a pinch, there is a healthy option on the market I can purchase. And the packaging was just too cute to throw away, so I decided to wash and reuse the package with my homemade pudding.

Vanilla Bean Chia Pudding
Prep time: 10 min
Cook time: 1 hour
Total time: 1 hour, 10 minutes
Ingredients
- 1/4 cup chia seeds
- 1/2 cup coconut milk
- 1/2 cup water
- 1 teaspoon cinnamon
- 1/2 teaspoon vanilla bean paste
- Mix coconut milk and water to chia seeds. Add cinnamon and vanilla bean paste. Mix well. Let sit for 1 hour ambient or refrigerated. Add water or coconut milk one tablespoon at a time to the gelled mixture to reach desired consistency. Ready to eat.
If it looks a bit too gelled, you can add more coconut milk or water a tablespoon at a time to achieve the desired consistency.
